有赖于重庆地缘地貌,山势纵横,河谷交错,“平行岭谷”的地理结构,让它充满着无限的现代立体主义,轻轨穿楼,崖洞嵌山,江河飞扑,高低莽然,崎岖绵延的楼梯街巷,一边连着地,一边通着天,数百的桥梁在山谷里平行交叠,无数的防空洞豁阔在山地之中。重庆的莽莽飘逸的江湖气,也自这山水城楼里浩荡出来。

铜小馆,便是这样一间有态度、有温度、有重庆山水人文与历史积淀的川菜馆。它以传承、坚守的匠心精神,收集、还原濒临失传的老川菜、功夫菜。十余年经营,在重庆餐饮江湖地位不可撼动。铜小馆的每一道菜,辣可翻腾江湖,柔可化骨绵长,每一道菜,皆有法可循,遵循传统川菜的工艺,让老川菜得以发扬光大。

这是设计师与业主用心筹划的一种新尝试。区别于其他餐厅,摒弃传统中餐厅或江湖菜馆纷繁复杂的环境呈现,将餐厅与重庆城市特征气息相融、血脉相交,结合铜小馆的餐饮特质与重庆地缘地貌特色,将餐厅与设计艺术做最直接的连接,让餐厅的江湖在城市的血脉里重构。

重庆的建筑从来不一格,依照地形地貌飘洒发挥,交织错落的交通轨道、立交桥、防空洞、开阔连绵的江岸和撑起江面的桥墩,这些都是重庆有着奇异的立体城市符号。重庆人吃饭,也从不拘一格,桥下、江边、洞子里,也都是餐饮多的地方。

在外摆区,设计师将防空洞剖出其剖面,将拱洞独特的结构美与立面感糅合在空间之中,甫一进入空间,人的眼光便被吸引,空间的张力与城市的魅力似乎由此为轴心逶迤展开。

圆弧卡座区用轻轨与桥墩符号构成空间,火山岩材料的桥墩是具有年代质感重庆建筑的表达,桥墩之上有弧形轨道围绕,寄予空间平衡张力的同时,让设计的美学趣味与城市建筑观念藏在空间内,亦有类似中国传统园林借景之妙,让空间中的各个区域隔而不绝,连绵不断。

设计师不断强调城市符号——拱洞在文化意象与设计表达上的认知和趣味,在一些位置上,拱洞不再单独出现,它们与重庆大桥符号相结合,空间中矗立起桥的景观洞的风貌。因为需要通透,桥墩符号就演变成了一种线性构成的屏风。

而在包房区域走廊的对墙是重庆跨江大桥的红色拱洞,进入包房,也需要从两扇桥墩中穿过,人不觉间便完成了城市肌理中的建筑书写。

在大厅圆柱的隐形暗门上,设计师巧妙地将重庆地标——十八梯及其所在的城市风貌画和圆柱相融合,画中阶梯的线条与圆柱线条互相交融。不经意间,人的尺度与感官仿佛发生错位,画中景象延伸出来,与空间中的桥、洞、轨道交汇,重庆的地域风貌在此间被延展还原,空间与意识紧密相连,空间环境在此既是主观也是客观。

铜小馆的整个空间是完全不规则的异形结构,设计师马艾洋用“异形破异形”,空间化整为零,满足不同功能做分区。

在优先满足厨房与通风的设置情况下,在入口处靠窗敞开做出 8 间包房,结合外廊做出外摆区,圆弧式开放式大厅半开半隔圆桌内厅,沿着异形的线条交织展开。设计师巧妙地将桥墩、拱洞、江岸等重庆地域文化符号和异形的空间线条及功能婉转糅合。在这些特有地域文化符号呼应下,空间功能与空间景观之间构成了层次丰富的递进关系,为用餐的客人提供了独特趣味的视角与体验。人穿过空间,有开放与半围合的交替的连续感受,空间更加灵动。

餐厅摒弃繁复缭乱的颜色营造,以极简为切入点,外观以黑白为主色,里观在黑色与白色中糅合灰色,沉稳具有风度的灰度中透出的是室内的平顺与温暖,用餐画面变得简单、干净,提升空间的视觉美观和用餐体验感。

在极简的黑白灰中,开放的公共区域以灰白浅色和莫兰迪绿为主,辅以局部暖木色点缀,突显雅致干净,仙人掌绿植景观的出现,赋予空间生机活力。在极简之上,包房色彩更偏绚烂,以 Tiffany 蓝、克莱因蓝、马卡龙粉、复古红为主色块,色彩的深浅光影中,是具有蒙德里安韵律的构成。
In the minimalist black, white and grey, the open public areas are dominated by pale grey and Morandi green, supplemented by local warm wood colors, highlighting the elegance and cleanliness of the space. 整个空间从不同角度看,既有顺色,又有撞色,色彩冲突、交融、重叠、呼应,在灰色的极简空间中充满了惊喜,空间变得有趣而生动。

光,是塑造空间的媒介与手段,是空间氛围的线索与营造,是艺术与技术对自然的模拟和改变。在空间光影的营造中,设计师依旧从重庆特有地域文化符号入手,在空间光影语言上,再一次完成人与空间、空间与城市的对话。

半开放区是一整面西晒的玻璃幕墙,设计师用重庆常见的斜拉桥符号,营造江边胜景,桥上“拉索”交织构成的网格,将阳光进行分割过滤,减弱刺眼光效,提升此处用餐舒适感的同时,让空间形成斑驳的光影效果,与空间的线性桥墩屏风投射的光影流动交织,时间仿佛被弯曲,更缓慢地流逝。

一个空间里有地域山川,有城市意象。一个餐厅的表达,也可以说是一个城市的语言,以城市文化符号为本,又以人文气息与空间艺术为底蕴,空间的设计语言与城市环境相融合的二次表达,是整个城市发展之下,人们对更富有品质感的环境的心理诉求与碰撞,摩天大楼,烟火生活,最好的餐厅设计,是让餐厅本身去讲述它和它所在城市的变迁和故事。
