The Client:
In addition to the Ayinger private brewery, the Inselkammer Family operates a number of gastronomic establishments as well as upscale hotels.
The Task
Die Pfistermühle (directly translated: The Baker’s Mill). Craftsmanship and tradition have played an essential role in the building since the 16th century. To highlight and incorporate these elements in the redesign of the restaurant Pfistermühle, in which upscale Bavarian cuisine is celebrated, was the task asked of DREIMETA.
The Idea
Skillful details and high-level craftsmanship, in the dining area as well as in the kitchen, should be clearly recognizable. We provide the space needed to experience details of traditional crafts; crafts that are slowly beginning to disappear. Potters, blacksmiths, carpenters, tanners, weavers, bakers and cooks take the spotlight - modern technology is mostly hidden and operates in the background.
The Implementation
The solid oak wall panelling was completely dismantled in order to refurbish the surface. The dark stain was removed to bring out the beautiful, natural oak surface underneath; a deliberate decision was made not to restore of the signs of wear accumulated over time. New backrests and cushions were designed for the benches that previously had none, all upholstered with fine, naturally tanned leather. The lampshades were designed using coarse linen from flour sacks, forged nails serve as coat hooks and a chandelier was constructed using 7 forged ceiling lamps that previously hung in the restaurant. Wine coolers were handmade for the project by a potter and a blacksmith forged the iron base on which they stand. Old baking sheets from a large bakery were transformed into a sign and into a folding screen that partially conceals the entrance to the kitchen.
The Success
The redesign was well received, even among the regulars - despite the break with the past.
