《诗经·小雅》有云:「南有嘉鱼,烝然罩罩。」
“South China produces delicious fish, and the fish swim with their tails wagging.”— The Classic of Poetry Xiaoya.
「有鱼」之名出自《诗经》,《诗经·小雅》有云:「南有嘉鱼,烝然罩罩。」这种诗意化的雅致同样被延续到了空间,空间的设计恰恰是为了完美诠释料理体验,此时,空间与美食碰撞产生的美妙化学反应为整个体验勾勒出了一个完美的闭环。在「有魚」,“お任せ”(厨师发办)由主厨决定用餐的菜单,而随之带来的便是体验主厨为每位顾客量身定制的极致服务与享受。
The name of “You Yu” is inspired by the ancient Chinese book “The Classic of Poetry”. The poetic elegance extends from the name to space. Space is designed to perfectly interpret the culinary experience. When space and food collide and produce a wonderful chemical reaction, the whole culinary experience forms a perfect closed loop. In “You Yu”, the chef designs the menu for each meal called “Omakase” instead of ordering food by the guests, and the diners can experience the ultimate service and enjoyment tailored by the chef.
板前料理既是一种表演艺术,也是师傅职人精神的体现。主廚的匠人精神将十几年如一日的精湛料理技术,浓缩在了握寿司里,最终呈现在客人面前。
Omakase is not only a kind of performing art but also the embodiment of the spirit of the chef. The craftsman spirit of the chef drives them to interpret the exquisite cooking techniques in the grip sushi, and finally presented in front of the guests.
弧形吧台提供了互相可见的座位,即使相距甚远也能看到彼此,少了方桌聊天时的尴尬,多了面对面交谈的真诚。空间还可依据用餐人数进行隔档,让原本接待 16 人的大空间变换为两个各容纳 8 人的隐密空间。The curved counter provides seats that can let the guests be seen by everyone, even if they are far away from each other, which would be less awkward than chatting at square tables. Space can also be simply separated according to the number of diners so that the original reception of 16 people can be separated into two hidden spaces for a maximum of 8 people each.
艺术家潘曦为「有鱼」而创作的水墨作品化为壁纸点缀着空间,用水下世界的静谧呼应着主题,圆柱状水族箱的空间外形与之呼应,食客仿佛徜徉在水中,轻抚水草,与鱼儿嬉戏,好不快活!阳光倾泻在玻璃上,穿透鱼鳞式贴膜,在墙上作画,斑驳的光影与墙上画作重叠,仿佛一次艺术的再创作。
An ink painting by artist Xi Pan for “You Yu” is transformed into wallpaper that adorns the space, the silence of the underwater world echoes the theme of the restaurant. The building is shaped like a cylindrical aquarium, diners sitting inside seem to be wandering in the water, stroking the water plants, and playing with the fish. When sunlight penetrates the glass covered with fish scales, it leaves a reflection on the wall that overlaps the wallpaper which becomes a re-creation of art.
刺身最大程度的保存了鱼身上的肌苷酸使其更加鲜美,而炭烤和油炸创造出的美拉德反应更是让饕客无法自拔。美食在舌尖跳动奏出欢乐的交响乐,美味充盈着整个味蕾,抚慰着每一位食客的身心。
Sashimi maximally preserves the inosine acid in the fish to make it more delicious. The Maillard reaction created by charcoal roast and deep-frying makes diners unable to get rid of themselves. The delicious food beats out a symphony of joy on the tongue, filling the whole taste bud and soothing the body and mind of every diner.
「有鱼」创造出一片拥抱天际线的「水下世界」,当侘寂的日本元素与东方水墨碰撞后,一场交响乐就此发生,从序曲到乐章,移步异景,层层递进。在城市高处散发着光芒,将所有的喧嚣阻隔在门外,并用美食抚慰人心,「有鱼」俨然成了忙碌都市中的一方避世小天地,恣意的拥抱自在与宁静。
“You Yu” creates an “Underwater world” that embraces the skyline, and as the “Wabi-Sabi” collides with Oriental ink painting, a symphony would happen. From overture to the movement, the view changes with every move. “You Yu” Japanese Restaurant, standing on the highland of the city, radiates light and blocks all the noise out of the door, comforts people with delicious food. It has already become a small world to escape from reality temporarily in a busy city, embracing freedom and tranquility.
